Watermelon – Pimms Sorbet

Injecting booze into watermelon is a popular pastime (though I have never tried one). And there is the prevalence of summer watermelon cocktails. Why not add liquor to a watermelon sorbet?

Why Pimms? My sister-in-law makes a mean Pimms, loading it up with a medley of fruit like strawberries, apples, oranges and cucumbers. And a quick online search yielded more than enough examples to convince me they were a good match!

INGREDIENTS

  • 1 1/2 pounds watermelon, cut into chuncks
  • 1/2 cup sugar
  • 1 tablespoon lime zest
  • 2 tablespoons lime juice
  • 1/4 cup Pimms
  • Pinch of salt


PREPARATION

Add watermelon chunks, sugar, lime zest and juice, Pimms and salt to blender. Purée until smooth. Taste and add more sugar if necessary (not all watermelon are equally sweet).

Pour mixture into ice cream maker and churn until softly frozen.

Transfer into container and freeze for at least 2-3 hours.
